This little piggy had some bourbon

My day was filled with tasks….responding to all of the emails I didn’t get to during last weeks meeting marathon. I had a quiet day at home and muddled my way through. Amazing how much you can accomplish without all of the incidental interruptions. At 5:00 I remembered that C. would be here tonight and I needed to dream up dinner…not to mention I still had to add something new to my day. I thought C. would be traveling this week, so when I did the grocery shopping I didn’t buy any “real” food. Just some eggs, soup and salad.

Good thing those pork loins were BOGO last week and I froze enough porkchops to last until July 4th. Not sure what I was thinking….I don’t even really like pork. Nonetheless…today I am glad I stocked the freezer.

Found this recipe for a bourbon marinade. Thought I would give it a try. Surely drunk pig is better than salty rubbed pig.

Bourbon Marinade:

  • 1/4 cup soy sauce
  • 1/4 cup bourbon
  • 2 tablespoons brown sugar
  • 2 cloves garlic, halved

The marinade smelled interesting…kind of like a drunk frat boy who just ate a little Kung Pao Chicken- not that I would know anything about that. 2 hours marinating. C. was quite impressed that I had even thought about dinner. He normally is the week night cook.

The brown sugar created a nice crispy texture on the outside of the grilled pork. The actual flavor was a little too soy saucey for me. I think it needed a little honey. It wasn’t spectacular. I read a review of the recipe and someone mentioned adding apricot preserves to it. Perhaps we’ll try that next time.
